Description
The VINES have been approx. 27 years old and are cultivated in a dense of around 4.000 vines/ha. To profit from the rising ground-heat and to reach a high foliage-wall we use a trellis training system at about 60-90 cm and apply the guyot cutting system
The SOIL is sandy-stony and loamy. The vineyards have green-cover, which is opened only at extreme drought
IN THE CELLAR the grapes have been destemed and squeezed and must was standing approx. 8 hours before being pressed oxygen-free by a pneumatic Inertys-press with low pressure. 10% have been fermented in new Barriques, 90% in stainless steel tanks. The wine was also stored seperately, 20% in used Barriques and 80% stainless steel tanks, after 4 months the wine was bottled in our cellar in Burgundy bottles
Sparkling golden-yellow, in the nose herbs and an idea of nutmeg
On the palate robust with fresh nuances of citrus and ripe pear; a hint of wood gives the wine balance and round body. Nice acidity and vital fruit in the finish
